Subject: [PATCH] CAMEL-22857: Move docling and vault examples to
 camel-jackson3-starter

Spring Boot 4 uses Jackson 3 by default, and the other JSON examples
already use camel-jackson3-starter. docling and vault were the last two
examples using the Jackson 2 data format (camel-jackson-starter).

Verified by running both examples per their README against containers,
on Jackson 2 first and then on Jackson 3:
- vault: GET /api/cars output is identical.
- docling: Markdown output is identical; the extracted metadata JSON is
  semantically equal, but properties are now in alphabetical order
  (Jackson 3 default SORT_PROPERTIES_ALPHABETICALLY).
