docs, site: move the lean canvas to the private repo, reword tenet 8

The business model, pricing hypotheses and revenue plan are no longer
published alongside the code. Tenet 8 of the manifesto keeps the promise
that matters to users: the open core is sufficient and never crippled,
and the free/paid line is stated in the README.
