Subject: [PATCH] Docs(ci): Pin the docs publisher that can publish releases

why: The pinned libtmux/docs commit's immutable-tag guard failed every
release-version publish before writing anything.

what:
- Pin the build-script checkout and reusable-deploy.yml to libtmux/docs
  main, which fixes the guard (libtmux/docs#42)
