- Bump to freetype 2.15.0 in the "latest releases" jobs
- Pin Freetype to its 2.10.0 minimum in the "oldest" jobs
- Update INSTALL with these and also to reflect the latest homebrew bumps that I'm testing on my machine (and will be testing in CI when the GHA Mac runners next get tweaked).
