docs: replace placeholder example.com audio URLs with real samples - #184

Update the quickstart in CLAUDE.md and the speaker-diarization sample to use working AssemblyAI-hosted audio files instead of example.com, which doesn't host audio and makes the snippets non-runnable as-is.
