docs(adopters): register Estoa for Baton Track C validation - #429

Add the authorized Estoa adoption announcement to the living registry. The official Adopters discussion is #426. Estoa is a private StrangeDaysTech development repository. Only its authorized identity and generic technical stack are listed. The project already uses framework 4.44.0 and CLI 3.48.0. SpecKit also governs its development. Baton participation starts in classification and recommendation mode. Telemetry will be manually reviewed, sanitized development aggregates. No private paths, source files, operational data or credentials are shared. The entry commits to reproducible findings and bounded upstream PRs. Forward-validation still requires prospective units and retrospective labels. The entry does not claim an N=2 pattern graduation. The discussion requests incorporation; this PR remains subject to review. Validation: reviewed table structure, official link and git diff --check. No runtime behavior, dependencies, versions or releases change. No merge or documentary human approval is implied by this proposal.
Maintainer review of #429: state what Estoa's participation can validate (Baton's declared work-verb classification, #332) in a second domain vs Sentinel's Go backend, with Track C calibration still pending. Estoa requested collaborator adoption in Discussion #426. Add its registry row with existing StrayMark/SpecKit use and a commitment to manual, sanitized Baton Track C development feedback.
