[CI][Python] parquet/test_encryption.py fails with NameError: name 'InMemoryKmsClient' is not defined #51446

Some of our nightly CI jobs have started failing with:
- example-python-minimal-build-fedora-conda
- example-python-minimal-build-ubuntu-venv
- test-conda-python-3.12-pandas-latest-numpy-latest
- test-conda-python-3.13-pandas-latest-numpy-2.1.3
- test-conda-python-3.13-pandas-latest-numpy-latest

@raulcd I think this should be fixed by #51457. I've reproduced the crash locally and verified it's fixed for me. But I haven't run all of the failing CI jobs in Docker.
