Clarify _ convention?

It's mentioned in the "[Polymorphism](https://github.com/cognitect/clojure-lab/blob/master/src/cljlab/polymorphism.clj)" section that using `_` is a convention, and there's nothing special about using that character, but I think it might be useful to demonstrate that fact with an example.
