The booking scheduled IN_TWO_HOURS should have two reminders generated for it (1h and 15m), but the tests were mistakenly asserting only 1. Updated assertions in `apps/api/src/system/workers/outbox.dispatcher.spec.ts` to expect 2 reminders instead of 1, fixing the failing test suite. Fixes the test suite by ensuring the outbox dispatcher tests expect two reminders (1h and 15m) when a booking is two hours out, instead of incorrectly expecting only one reminder.
