Release v0.8.189: version bump to 0.8.189 in every package and plugin manifest, the release notes in releases/v0.8.189.md, and the matching entry in the docs changelog.

Since v0.8.188 it ships four render fixes: staged audio mixing for any number of clips, opaque ProRes clips extracted as JPEG frames, one x264/x265 thread count on any host size, and a history lock that works on drives without hard links.

Merging this PR runs the Publish workflow, which creates the v0.8.189 tag at the merge commit, publishes the npm packages and creates the GitHub release. No tag is pushed by hand.

The parent is the current main tip (bd4cae7e3). v0.8.188..head contains exactly the four fixes listed (#6120, #6125, #6127, #6130), and the commit SHAs and links in releases/v0.8.189.md and docs/changelog.mdx match them. All 19 version manifests move to 0.8.189, and no 0.8.188 is left outside the release history. The diff has no code changes. CI was still running when this was posted.
