Fix dead link in override_leaflet_class_methods docs - #2319

The linkcheck job fails because https://leafletjs.com/examples/extending-1-classes/ 404s. Leaflet moved the class theory tutorial under an extending subpath; point at https://leafletjs.com/examples/extending/extending-1-classes.html instead.

Summary
The "Publish Docs" linkcheck job fails on a 404 for
https://leafletjs.com/examples/extending-1-classes/, which was addedin #2159 (June 2025; see linkcheck run on the docs-favicon PR for the
example).
Leaflet reorganized its example pages: the class theory tutorial now
lives at
https://leafletjs.com/examples/extending/extending-1-classes.html
(link verified with a 200).
